Cryolipolysis is the medical treatment that uses sub-zero temperatures to destroy fat cells in the body by freezing them away. Cryolipolysis treatments work by triggering apoptosis (cell death) of the fat cells. This is achieved without risk to the other tissues (in particular muscular tissue) by the fact that the intracellular water and electrolytes of the fat cells are the first to crystallize in the cold before all the others.
